Venture outside the typical tequila cocktail and try a refreshing Paloma!
by Francisco Almanza III on 08/13/12
When I added the Paloma to our drink menu I was not trying to be trendy or think outside the box. I simply wanted to add a traditional Mexican cocktail that is regularly enjoyed throughout Mexico. I then thought back through many memories of family gatherings, watching my fathers soccer games, watching him sing as a Mariachi in our restaurant, and finally going to Mexican rodeos to watch his team compete. I was trying to remember how the adults celebrated and what they were drinking. I could only remember three drinks: Micheladas, Presidente and coke, and finally the Paloma (a favorite after a Mexican Rodeo). The Paloma jumped out at me. So I asked myself how would we put our spin on the Paloma and make a version that is ours. I began scouring the net and going to other restuarants for inspiration only to find that Palomas were not widely offered in authentic Mexican restaurants. I quickly learned that the Paloma was enjoying a resurgence as a trendy coktail in some of the upscale bars and restaurants. This I had to see. I ventured into many different bars to sample the new taste sensation. What I was served in each place was very different from what I remembered. Each time it was some sort of white grape fruit infused tequila with a splash of cranberry or a twist of mint or shaken with a raspberry puree and rimmed with sugar....I can go on and on with all the marketing jargon that was thrown at me. I'll be honest. Most of the drinks were really good some sickly sweet a few downright awful but none of them would be considered a Paloma by Mexican standards. That's when it hit me I wanted to offer a traditional Mexican Paloma and serve it the way my father prepared it and the way they serve it throughout Mexico. Fresh pressed lime juice, salt, Cazadores Tequilla, and Mexican Squirt. Nothing "fufu" or pretencious just a real Paloma and that is how we would stand out. So I cordially invite you to come in, take a seat on our beautiful patio and enjoy the drink that is quickly becoming our most popular cocktail and that is almost out-selling our popular Don Julio Coin margaritas (especially on hot days).
